Cauliflower Pizza

Being a massive pizza fan but not as big of a lover of too much bread, I have found a perfect compromise : Cauliflower pizza! This is super easy to make, requires no waiting for yeast to react (unlike traditional pizza dough) and can be tailored to your taste. It can even be apart of a gluten-free or keto diet as a healthy pizza alternative!

Ingredients
Cauliflower Pizza Base
  • 400g Cauliflower,
    chopped into florets
  • 1/3 C Shredded cheese*
  • 1 Egg,
    beaten
  • 1/2 C Sunflower seeds
  • 1 tbsp Dried basil leaves
  • 1 tbsp Nutritional yeast
  • Salt and pepper,
    to taste
  • Spinach Pesto sauce,

Method
  1. Preheat oven to 160°C.
  2. Make cauliflower base: Grate cauliflower using a box grater or food processor**. Add to a saucepan and saute the cauliflower rich on medium heat for 8-10 minutes. Add the cooked cauliflower rice to a large bowl remaining pizza base ingredients and mix. On a baking paper sheet tray, press the dough down into shape of choice (traditional circle is an option) or on pizza stone. Bake for 25 minutes or until slightly golden.
  3. Take cauliflower pizza base out of oven and top with pesto sauce and ingredients of choice***. Bake for another 10 minutes and enjoy hot!
NOTES

*The tasty combination of parmesan and mozzarella cheese is usually a safe and rewarding bet.

**I like to put bocconcini, artichokes and mushrooms sprinkled with a bit of parmesan. The choice is yours.

I would opt for the food processor because it is efficient and saves time.
