Heavenly Peanut Butter Cookies

These are super easy and definitely rewarding to devour. The balance between sweet and salty is phenomenal and are sure to please the crowds.

Ingredients
  • 1 1/2 C (180g) Plain flour
  • 1/2 C (113g) Butter unsalted, room temp
  • 1 C (250g) Peanut butter
  • 1/2 C (100g) Brown sugar 100g, lightly packed
  • 1/2 C (100g) White sugar
  • 1 tsp Vanilla extract
  • 1 Egg large, room temp
  • 3/4 tsp Baking powder

Method
  1. Preheat oven to 180°C.
  2. Sift flour and baking powder together.
  3. Cream butter and sugars in an electric/hand held mixer (for efficiency and guaranteed consistency).
  4. Mix in peanut butter.
  5. Add egg and vanilla extract followed by the flour mixture and beat until combined.
  6. Roll dough into balls and place on baking sheet lined with baking paper.
  7. Bake cookies for 10 minutes
  8. Allow cookies to cool completely on baking sheet, this is important before you transfer them*.
NOTES

*This recipe requires that you bake the cookies until almost done. They will continue baking with the residual internal heat after being pulled out of the oven. It is crucial that you let them rest until completely cooled as they will be VERY soft right out of the oven. When cooled, they will be firm enough to handle and quite delicious.
