Veggie fritters

Fritters are such a classic vegetarian favourite. They are a mixture of everything nice with some extra spice and I really can't go past this recipe (neither can my family). These are super easy to make and are perfect for a light snack or on a vegetarian burger.

Ingredients
  • 1 potato,
    large
  • 1 cauliflower,
    half a head
  • 1 onion
  • 150g spinach
  • 1 1/2 C almond flour
  • 1 tsp bicarb soda
  • 2 tsp garam masala
  • 2 tsp basil
  • Virgin olive oil for deep frying

Method
  1. Boil the potato until tender, peel and chop finely.
  2. Heat oil. Finely chop the cauliflower and onion. Make a creamy batter of the remaining ingredients, adding cold water if necessary and mix in the vegetables.
  3. Drop tablespoons of the mixture into the oil to make a single layer. Fry until golden brown (about 10 minutes). Serve hot and enjoy!
NOTES

You can shallow-fry the mixture if desiring bigger patties.
