Zucchini Chips

Who knew that Zucchini are perfect substitutes for potato when it comes to chips? The super crunchy outside is balanced perfectly by a soft warm inside and these sure do make you feel less guilty for eating a heap. Be sure to make these delicious veggie chips.

Ingredients
  • 1 medium Zucchini,
    sliced into chip portions
  • 1 egg,
    scrambled
  • 1 C flour
  • 1 C breadcrumbs
  • 2 tbsp nutritional yeast
  • Extra virgin olive oil
    for deep frying

Method
  1. Pre heat the deep fryer. In three separate bowls, arrange the flour, scrambled egg and breadcrumbs + nutritional yeast.
  2. Coat the zucchini stick with the flour followed by the egg and finally coat it in the breadcrumb mixture and place on a plate. Repeat for remaining zucchini sticks.
  3. In layers, deep fry the zucchini chips for about 5 minutes. They will be cooked through. Serve immediately and enjoy!
NOTES

These are so simple to make and are a low calorie alternative. Do savour eating these!
