Blueberry oat protein slice

Protein packed slice that leaves you feeling fuller for longer and gives you the essential nutrients you need like vitamin C, fibre and omega 3. This is a modification on my peanut chia protein slice with the addition of a few extra ingredients, with blueberry as the star. If you are a blueberry lover, this one is for you!

Ingredients
  • 12 pitted dates,
    softened*
  • 1 can chickpeas,
    drained
  • 1/4 C chia seeds
  • 1/4 C almond flour
  • 1/2 C oats
  • 1/2 tsp baking powder
  • 1/4 C protein powder
  • 1/2 punnet blueberries
  • 1/4 C flaxseed meal
  • 1/4 C nut butter

Method
  1. Grease a smaller rectangular baking pan and line with baking paper. Preheat the oven to 160°C.
  2. Blend all ingredients in a food processor until smooth (minus the blueberries). Stir in blueberries.
  3. Bake for 20 minutes or until golden on top. Enjoy!
NOTES

*With dried dates, you will need to soak them in boiling hot water for 10 minutes and then drain them. I would recommend reserve the water to use later so you can achieve the desired consistency.
